Asparagus - Spring's Tastiest Veggie

Mmmm...asparagus.  Those green spears are more than just a tasty addition to your meals, they are also packed with vitamins & nutrients.  Asparagus is high in Folic Acid (5oz provides 60% of your daily allowance) and a good source of Potassium, Fiber, Vitamin B6, Vitamin A and Vitamin C.  It also is low in calories, contains no fat or cholesterol, and is low in Sodium.

  • Asparagus is a member of the Lily Family.
  • Under ideal conditions, it can grow 10" in 24 hours!
  • Asparagus plants can produce for 15 years without being replanted.
  • The veggie was so loved by Roman emperors that they had special 'Asparagus Fleets' of boats for obtaining it (it is native to the Eastern Mediterranean countries).
  • If you notice an unpleasant odor in the restroom after eating asparagus, consider it a good sign that your kidneys are functioning properly.  The odor is a result of digestive enzymes breaking down the vegetable.
Cooking Tips:
  •  Fresh Asparagus in the Microwave
    • Add a quarter cup of water to a microwave safe bowl, add 1lb of asparagus (bottom ends cut), cover, cook for 4-7 minutes
  • Fresh Asparagus in a Saucepan
    • Cook spears (bottom ends cut) in  a small amount of boiling water until tender (about 5-8 minutes).
  • Fresh Asparagus on the Grill
    •  Prehead grill for high, direct heat.  Place spears (with bottom ends cut) in a container.  Drizzle with olive oil, balsamic vinegar & sprinkle with salt.  Place spears directly on the grill for 5-10 minutes until nicely charred & fork tender.  Be sure to turn them every few minutes for even browning.
